Fermentation: Fermented in Stainless steel and small open top bins.
The fruit was de-stemmend and hand-sorted. 20 days on the skins; native fermentation. Aged in neutral French barriques for 12 months
Tasting Notes: Fresh ripe berries, smoke, brown spice, dark chocolate on the nose. Flavors of fig paste, plum, mint, and licorice followed by a bright, lush and balanced finish.
